Extra Crispy Garlic Lime Sweet Potato Fries

2 large Sweet Potatoes white
5-6 Cloves Garlic minced
2 Tbsp zest Limes or zest of 2 Lime
5 tablespoons Olive Oil + 2 more tablespoons later
1 1/2 teaspoons Sea Salt
Juice of one Lemon
Fresh cracked Pepper
Whole Cloves of Garlic and lime slices for garnish
Fresh Parsley for garnish



Preheat oven to 175C
Cut the sweet potato in wedges or strips. Toss them on a sheet pan with the olive oil and seasonings.
Spread the fries out evenly on the sheet pan. Bake on 175C for 20 minutes. Then drizzle 2 more tablespoons olive oil over the fries.

Cook for another 50 minutes then turn the fries and remove the whole garlic and limes slices to prevent them from burning.

Put the fries back in the oven and cook for another 20 minutes.
